Black Bean Soup

1 Large Onion
1 Large Carrot
½ Head of Celery
2 Cups Salsa
4 Cups Diced Tomatoes
¾ Can of Black Beans Drained
1 T. Cumin
3 Qt. Vegetable Base
3 T. Tomato Paste
Salt and Pepper to Taste

Dice up onion, carrot, and celery and add to frying pan.  Add 1 tablespoon of olive oil and sauté vegetables until thoroughly cooked.  Add vegetables to large pot and mix all ingredients together.  Let simmer for 30 minutes.   Sprinkle cheddar cheese and/or tortilla chips on top for extra fun!
